Tortellini Salad

Ingredients
180g Mixed-coloured Veal Tortellini½ cup Asparagus, cut into 5cm pieces½ cup Snow Peas, trimmed¼ Butter Lettuce¼ Red Capsicum, sliced4 Yellow Cherry TomatoesDRESSING:1 tbs Olive OilSqueeze fresh Lemon juice to tasteSalt & Pepper to taste
Directions
1. Cook tortellini in boiling water in a large saucepan, following packet directions. Drain, rinse under cold water and set aside to cool.

2. Boil, steam or microwave asparagus and snow peas separately unter tender. Refresh under cold running water and set aside to cool.

3. Arrange lettuce, red capsicum, tomatoes, tortellini, asparagus and snow peas in a large serving bowl. Pour dressing over and serve immediately.

Do Ahead:

Cook the pasta and vegetabls for this salad in advance and store in the refrigerator for up to 2 days. The salad then only takes minutes to assemble.
