Blueberry Pumpkin Muffins

Ingredients
1 Box Duncan Hines Spice Cake Mix1 can 29oz 100% Pumpkin1 cup Instant Oatmeal1 cup frozen or fresh blueberries1 cup Walnut pieces (optional)
Directions
Preheat oven to 375 degrees. Spray muffin tins with canola oil spray. Rinse blueberries and drain on paper towel. In a bowl, mix together spice cake mix, pumpkin, and oatmeal. Sprinkle one tablespoon of flour over blueberries to coat and prevent them from sinking during baking. Add blueberries to batter and fold together. Fill muffin cups to top. Bake for 30 minutes. Cool on wax paper. Can be kept in refrigerator for 3 weeks or frozen for 3 months. 1 muffin equals 1 serving. Makes 18 muffins.
