cooking spray 3 (one ounce) Farmland sausage patties3 fresh large eggs3 tbsp shredded cheese3 tsp chopped chivessalt, pepper, if desired (not inclueded in NUTRITIONAL INFO)
1) Preheat oven to 350ºF . Spray 3 cups of a large muffin tin with cooking spray.
2) Arrange sausage patties so they line each muffin cup completely. Bake for about 3 minutes. Carefully drain excess fat.
3) Break an egg into each cup, gently breaking yolk. Sprinkle with salt and pepper, if desired.
4) Place in oven for about 18-20 minutes. Remove and sprinkle with cheese and chives. If they are not set, continue cooking at 1 minutes intervals.
