GF Chicken Parmesan

Ingredients
1.25 pounds boneless, skinless chicken breast1/2 cup potato starch1 tsp Italian Seasoning1/2 tsp garlic powder1/2 tsp salt1/4 cup Kraft Parmesan Cheese2 tbsp Olive Oil2 cups Marinara Sauce1 2.25 oz can sliced mushrooms1 2.25 oz can sliced olives4 oz Mozzarella Cheese
Directions
Preheat oven to 400 degrees

Cut each chicken breast in half. Pound chicken with a meat mallet to 1/4 inch thick.

Mix potato starch, seasoning, garlic, salt and Parmesan cheese. Coat chicken with mix. Place in skillet a couple at a time and brown on each side and cooked through.

Meanwhile heat Marinara sauce in a sauce pan.

Place chicken in a oven proof dish.

Top with Marinara sauce, sliced olives and mushrooms. Top each piece with a slice of Mozzarella Cheese. Bake in oven until cheese is melted.
