Crockpot Italian Veggie Soup

Ingredients
3 zucchini, chopped1 jar of roasted peppers(10.6 oz), chopped28 oz can of diced tomatoes2 cans of great northern beans8 cups of water1 clove of chopped garlicbasil and oregano to taste1 tbsp red chile flakes (optional)
Directions
Combine all ingredients into a 6 qt crockpot and cook on high for 4 hours or low for 8 hours.

Add a dash of parmesan cheese for extra flavor before serving.
Makes 12 servings, 2 cups each.
