Ingredients
1 lb extra lean ground beef, browned and drained2-16 oz. cans chicken broth (low fat/low salt)2-16 oz. cans kidney beans, undrained2-14.5 oz. cans diced Ttmatoes, undrained1/2 head cabbage, shredded1 small onion, sliced to resemble cabbage1 small green pepper, diced
Directions
Combine all ingredients in a slow cooker and cook all day on low. One serving = approx. 1 cup
*For quicker assembly, you may use pre-bagged shredded cabbage (may contain carrots-that's OK) and frozen, chopped onions and green peppers.
Freezes well.

    This was a great filling stew. Instead of 2 cans of diced tomatoes, I used one 14.5 oz can and one 10 oz can of Rotel spicy tomatoes. They gave the stew a little kick and extra flavor. Great recipe for a cold day! - 1/14/13
