Asian Millet Salad

Ingredients
2.5 cups vegetable broth1 cup uncooked millet1 cup snow peas, chopped1 cup broccoli, choppedsmall can water chestnuts, slicedsmall can bamboo shoots4 scallions, chopped1 cup carrots, chopped or grated1/4 cup rice vinegar3Tbsp soy sauce2 tsp splenda3/4 tsp pepper1/4 cup peanut oil
Directions
In a medium saucepan, bring broth to a boil. Add millet and simmer 15 minutes. Remove from heat, cover and let sit 10 more minutes.

In a large bowl combine all vegetables. Fluff the millet with a fork and add it to the vegetables.

Separately mix the vinegar, soy sauce, sugar, pepper and oil into a dressing. Drizzle over the millet and vegetables, and stir until everything is coated. Chill at least 2 hours. Yields 6 servings, approximately 1 cup size.
