Fat Free Moist Chocolate Muffins

Ingredients

1 C. whole wheat pastry flour1/3 C. unbleached all purpose flour1/3 C. cocoa3/4 C. sugar2 Tsp baking powder1 1/4 Tsp baking soda3/4 C. (6oz. container) fat free light yogurt3/4 C. skim milk1 tsp vanilla
Pre-heat oven to 400.
Mix all the dry ingredients in a bowl.
In a seperate bowl mix all the we ingredients.
If desired (and reccomended) add in 1/2 C. Chocolate chips to the dry bowl.
pour the wet into the dry bowl and gently fold and stir. DO NOT OVER MIX... THIS KILLS THE MUFFINS. don't be afraid if there is still dry powder or if it's lumpy. It will be fine when it's baked.
Bake for 12 minutes

Mmmmm.... My son said that these were cupcakes, not muffins because muffins taste like whole grain wheat and these didn't. I put the choc. chips on the top of the muffins thinking this would make a great icing but the tops sunk in the middle. Next time I'll try putting them on after baking. Thanks! - 2/11/10
