Breakfast Turkey Sausage Hash

Ingredients
4 oz smoked Turkey sausage (Breakfast sausage)9 oz cooked red potatoes-unpeeled (about 3 small ones at 3 oz each) grated or chopped1 tsp Mrs. Dash or other seasoning as desired2 Egg whites and 1 egg yolk1/8 cup chopped onion2 oz low fat shredded cheddar cheese
Directions
Spray skillet with cooking spray (any kind)
1) Add 1/8 cup chopped onion (I use frozen) and 4 oz turkey sausage, cut and sliced into quarters and heat through on medium heat.
2) Add three 3-oz, already cooked red potatoes, unpeeled, grated or chopped (I used leftovers from the previous night) and Mrs. Dash or other seasoning to turkey mixture and mix well.
3) Brown potatoes on each side.
4) Turn heat to low and mix 2 egg whites and 1 egg yolk together and add to skillet mixture. Scramble mixture on low heat until egg is cooked through.
5) Divide into 2 serving dishes and sprinkle with one half of low fat grated cheese into each.

Makes two servings (about one cup each)

    Sounds good, but not low carb, Potato is not a low carb food. - 4/6/10

    According to my dietician, any food serving with 25-30 carbs per serving can be counted as low carb. You also would subtract the fiber. It not the potato, it's how much potato.

    This recipe was awesome! I cooked my own potatoes with Italian dressing and I Can't Believe It's Not Butter and I used the Garlic Herb Mrs. Dash. I don't like onion so I left it out and this dish still had plenty of flavor. Next time I will probably use more egg whites. I will make this again! - 12/2/09
