Pasta with spinach, sundried tomatoes and pine nuts

2 cups fresh spinach40 oz pasta cooked1/4 cup olive oil1/4 cup chopped sun dried tomatoes1/4 cup pine nutsAsiago or grated parmesan cheese (optional)
Cook pasta to al dente and drain. Put in serving/storage container.
Chop spinach and sundried tomatoes and add to pasta in bowl.
Saute pine nuts in 1/4 cup Olive oil until the pine nuts turn golden. Pour hot oil and nuts over top of pasta and stir. Cover and let flavor 8 hours or overnight. Can be served hot or cold with 1/2 ounce of grated Asiago or parmesan on top.
Makes 8 servings. 294 cal without cheese. 350 with cheese.
