Stawberry & Lavender Mascarpone Mille-Feuilles

Ingredients
1 cup sugar2 cups water6 lavender stalks2 punnets strawberry, reserve 6 to garnish500 mascarpone12 sheets filo pastry
Directions
In a heavy-based pan, dissolve the sugar in the water, add the lavender and cook on a low heat for 30 minutes to until reduced by half. Strain and cill. When cold, fold into the mascarpone and place in the freezer until firm, 5-6 hours.

Fold and layer each sheet of filo into 12 equal sized rectangles. Arrange on a baking paper lined tray, spray with oil spray and bake at 200ºC until crisp and golden.

Hull and half the strawberries,then arrange on 6 pastries. Place small scoops of mascarpone mix onto pastry, top with another pastry rectangle.

If desired top with a small scoop of vanilla bean ice cream (NOT INCLUDED IN CALORIE COUNT)
