Baked Falafel

Ingredients

1 15-19 oz can chickpeas, drained1 small onion, chopped2 cloves of garlic, chopped1 tablespoons of fresh parsley, chopped1/4 cup of fresh spinach, chopped3 tablespoons all purpose flour1 teaspoon coriander1 teaspoon cumin1/2 teaspoon baking powdersalt and pepper2 tablespoons olive oil
Drizzle olive oil evenly in shallow baking dish. Preheat oven to 350 - 400.
While oven is preheating, mash chickpeas with mortar and pestle or in food processor. Add onions and garlic and blend.
Add remaining ingredients to make a thick paste-like consistency.
Shape into ping pong size balls and place in preheated baking dish. Bake for 15-20 minutes, turning halfway through cooking.

KOALAPEPPER
Just made these tonight & they are amazing! I actually used 2 cans of 15 oz beans and made larger size falafel, I think we came out with 12 large falafes. The rest will be frozen or eaten this week. Spices were spot on, I'd recommend eating w/ http://allrecipes.com/Recipe/Tzatziki-Sauc
