Maine Gingerbread

Ingredients
1/2 C sugar1/2 C unsalted butter (or shortening)1 C molasses2 tsp baking soda1 C boiling water2 1/2 C flour1 tsp ginger1 tsp clove1 tsp cinnamon1/2 tsp salt (opt)2 eggs
Directions
Cream sugar and butter; add molasses; dissolve soda in boiling water and add to the sugar mixture. Sift the remaining dry ingredients and add this to the mixture, and beat until smooth. Add the eggs last. Pour into a greased pan 12"x8"x2" and bake in a moderate oven (350 degrees) for about 45 minutes. Check by inserting knife into center. Gingerbread will look glossy on top even when cooked through. Makes 15 good size pieces.
