Easy Egg Drop Soup

8 Cups of Swanson Chicken Broth1 Chicken Breast, cut into small pieces3/4 Cup Frozen Peas & Carrots2 Tbsp Kikkoman Soy Sauce or Reduced Sodium Soy Sauce2 Tbsp Corn Starch2Tbsp Water2-3 Green onions diced 2 Tbsp of Dry Sherry3 Eggs, Beaten1 Tbsp Sesame Seed Oil
Combine chicken broth, dry sherry and soy sauce in a pot. Bring to a boil, reduce heat and simmer for 2 minutes.
Add the chicken and frozen peas and bring to a boil. Simmer for 3 minutes.
Mix cornstarch and water in a bowl until smooth and add to the pot. Simmer for 2-3 minutes or until the soup gets a bit thicker and the chicken is cooked through.
While stirring in one direction, add the beaten eggs slowly. Add the green onions and sesame seed oil, stir and serve.

This was awesome! It tastes just like the chinese resturant I love. I omitted the sherry, soy sauce and seaseme oil (didn't have on hand) I did use a touch of teryaki sauce to make up some flavor missed by soy sauce. Can't wait to make again! Next time will stir slower for bigger chunks of egg - 1/25/10

Made this for dinner. I didnt add chicken, but added a couple handfuls of snow peas, water chestnusts, mushrooms, shredded carrots and celery. This was as good if not better than P.F. Changs egg drop soup! Thanks for the recipe! I have tried to make this before, but this is the best yet! - 2/9/11
