Rhubarb Crunch or Crisp

Ingredients
1 cup flour3/4 cup uncooked quick cooking oats1 cup brown sugar1/2 cup melted butter1 teaspoon cinnamon4 cups diced rhubarb1 cup sugar2 Tablespoons cornstarch1 cup water1 teaspoon vanilla
Directions
Mix first 5 ingredients until they crumble.
Press half of the crumbs into a greased 9 inch square pan.
Add diced rhubarb.
Combine remaining ingredients and cook until thick and clear.
Pour over rhubarb.
Top with remaining crumbs.

Bake at 350 degrees for 1 hour. Cut into squares and serve while warm with whipped cream.

    Most of the calories are from sugar. I switched to Splenda and brown sugar Splenda and it cut the calories considerably. It turned out fine and I was able to enjoy it even though I am diabetic. - 3/25/21

    I've always loved rhubarb, this is delicious! Don't try to skimp on the sugar though, it provides thickening as well as sweetness. - 1/20/19
