David's amazing potato latke

Ingredients
5 potatoes peeled and grated1 large sweet potato peeled and grated (I used african sweet potato)salt and pepper to taste
Directions
Mix ingredients and put into a med-hot frying pan. Using a spatula move the potatoes around occasionally scraping the sticky bits back into the pancake. When the potato is cooked (translucent) press firmly into a pancake. Let cook another 5 minutes or so until set and then flip onto a cookie sheet and bake at 220 degrees celsius until browned and crispy around the edges.
Delicious with applesauce and sour cream!

    instead of sweet potatoes,I use garlic, onions,turmeric,ginger.Instead of sour cream, I use kefir. But I will try sweet potatoes see how it tastes. Thanks. - 5/30/10

    I tried this as written, FAIL. it needs some oil. and i need a lesson on how to do this. it seems straightforward but this is one of those things i cannot cook right/good. even with a TBSP of organic coconut oil this was greasy. - 7/19/13
