Carrot Raisin Spice Cake with Cream Cheese Frosting

1 pkg Spice Cake Mix3 eggs1 cup applesauce1/3 cup vegetable oil2 cups grated carrots1 cup raisins
Preheat oven to 350.
Spray coating onto 13x9x2 inch cake pan.
Combine cake mix, eggs, applesauce and oil in large bowl.
Mix on low speed for 30 seconds, then medium speed for 2 minutes.
Stir in carrots and raisins.
Pour into pan and bake for 30-40 minutes until knife comes out clean, but with just a bit of cake to it. I find that if one cooks them till it's completely clean, it's too dry.
Cool and frost with Cream Cheese frosting.
Makes 12 servings.
