Chicken Thighs or Breasts. I use Frozen Thighs -by Trader Joe's.After I defrost my Chicken.I season it with 1. Oregeno Powder2. Italian Parsely,Italian Herbs,Paprika, Lemon Peppera tsp.,a tsp. if that of red chili flakes.Feta Cheese(Crumbled)EggplantSundried Tomaote-I like Trader Joes,but you can use anyFresh Basil LeavesBalsamic VinegretteGrapeseed OilMixed Baby Greens Salad or Whole Wheat Pita Bread
Clean and slice my sun dried tomatoes
.
Place it on top. Drizzle some of the oil,just a bit ,and a tsp. if that of grapeseed oil,I chop my Fresh basil and also put it on top.
Once my Grill is Pre-Heated,
I grill my Chicken for about 15 to 20 minutes or until done.
I cut my chicken in thin strips. I arrange the grilled sun dried tomatoe on top and pour some more sun dried tomatoe oil if needed,
For extra flavor,but not too much,Add crumbled Feta cheese on top,and a drizzle of balsamic vinegar..
You can also add a squeese of lemon and also simmer your balsamic vinegar to a reduction and a add a tsp. of brown sugar to it.
I also like Balsamic Dressings as well as an option.
(A Tip:)
And you can add some eggplant on top of your chicken.
I love Trader Joes Frozen Eggplant Cutlets.
I grill them and cut them into small pieces and throw them into many dishes. They are delicious .
Can also have Grilled eggplants strips with this and eat this with a fresh mixed Salad or have it in whole wheat Pita...
For your Salad, I use the reserved Balsamic and Grapeseed Oil Vinegrette.
