100% Whole Wheat Pancakes

Ingredients
2 cups whole wheat flour1 TBLSP baking powder1 tsp salt3 large eggs2 cups lite vanilla soymilk (I use 8th Continent)1/2 cup unsweetened applesauce1/2 cup water
Directions
Mix all dry ingredients together, then mix all wet ingredients together and blend with dry ingredients. Mix well for a smooth consistency. Use a nice hot non-stick griddle (you shouldn't need any cooking spray) and drop 1/4 cup mixture onto griddle. Cook until bubbly then turn and cook until done, (approx. 3-4 minutes per side). Serve immediately. I like to top mine with low cal trans fat free buttery spread and about 1/4 cup unsweetened applesauce with a sprinkle of cinnamon.

Makes approximately 20 4-inch pancakes. Unused portions can be frozen and re-heated in the toaster or microwave!
