Salmon Patties with Rosemary

1 lb. king salmon fillet, skinned and de-boned.5 cup dry bread crumbs1/4 Cup minced red onion1 to 1 1/2 tsp. Dijon mustard1 tsp. horseradish1 egg, lightly beaten1 1/2 tsp. fresh rosemary1/4 tsp. salt1/4 fresh ground black pepper1 tbs. olive oil
Slice salmon crosswise in very thin strips. Then, cut strips in small pieces to mince small. Be sure to remove any small bones. Add the lightly beaten egg, breadcrumbs, onions, horseradish, Dijon mustard, salt, and pepper. Mix evenly. Cover and refrigerate for at least 30 minutes. When ready, remove from refrigerator and form into patties. Lightly coat each patty with olive oil and grill 4-5 minutes on each side.
