Lolies Gobi Matar Paneer Masala

Ingredients
1 teaspoon vegetable oil1 medium onion, diced2 cloves garlic, minced2 teaspoons ginger root, grated1/4 teaspoon cayenne pepper1 tablespoon tomato paste1 tablespoon garam Masala Indian Seasoning14 ounces diced tomatoes, canned2 teaspoons sugar1/2 teaspoon salt1/4 cup cilantro leaves, whole, chopped400 grams raw cauliflower1/2 c. peas12 oz lite tofu (Mori Nu brand)
Directions
Heat oil in large Dutch oven over medium heat until shimmering. Add onion and cook, stirring frequently, until light golden, 8 to 10 minutes. Add garlic, ginger, chile, tomato paste, and garam masala; cook, stirring frequently, until fragrant, about 3 minutes. Add crushed tomatoes, sugar, and salt; bring to boil. Reduce heat to medium-low, cover, and simmer for 15 minutes, stirring occasionally. Remove pan from heat and cover to keep warm.

Meanwhile, break cauliflower into florets and roast in a 400º oven until edges are browned. remove from oven. Cut tofu into 1/2" pieces. When sauce is done, add tofu, cauliflower and peas to sauce. Heat and serve warm over rice.

    It's a large serving- the only ingedient with caloies to speak of is the tofu.
