1 egg yolk100 g plain non-fat yogurt1 tbsp lemon juicelemon zest1/2 tsp good quality mustardsalt & pepper to taste
Whisk egg yolk, yogurt, lemon zest, & lemon juice together in a heat-safe bowl. Move bowl over a double boiler and cook, stirring frequently, for approximately 15 minutes until thickened. Remove from heat and whisk in salt, pepper & mustard.
