Yummy Tofu Salad

5 large baby carrots1/4 cup onion, chopped finely1 block of extra firm tofu1/4 cup of tahini, sesame butter1/2 tsp horseradish, the creamed kind if you can find it (not horseradish mayo or mustard, just blended horseradish)4 tsp yellow mustard (or whatever kind you like)1/4 tsp garlic powder (I love garlic so this is what I use, but if you don't like garlic, just add it to taste)Salt and Pepper to taste
Makes about 10 1/4 cup servings.
Chop your carrots and your onion very finely. Set aside
Drain tofu after taking it out of container. Lightly squeeze the block over a bowl or the sink to get just a little bit of excess liquid out. In a medium bowl, mash the tofu with a fork until there are no large chunks. Mix in your carrots, onion, tahini, horseradish, yellow mustard, garlic powder, and then your salt and pepper. Mix until all ingredients are blended well.
Will keep for up to a week in a covered container in the fridge.
