Delicious Skillet Lasagna

Ingredients
1 tbs olive oil1 medium onion, minced3 garlic cloves, minced1/8 tsp red pepper flakes1 lb. 93% ground turkey10 curly-edged lasagna noodles, broken into 2" lengths1 (28 oz) can diced tomatoes1 (8 oz) can tomato sauce1/2 cup grated parmesan cheese1 cup mozarella cheese (fat free)
Directions
This recipe serves 4 to 6 people.

1. Heat oil in a large nonstick skillet, add onion and cook until the onion begins to brown (5 minutes). Stir in garlic and red pepper flakes and cook for 30 more seconds. Add the ground turkey meat, break apart, and cook until no longer pink (about 4 minutes).

2. Scatter pasta over meat, but do not stir. Pour the diced tomatoes with their juices and tomato sauce over the pasta. Stir. Cover and bring to a simmer. Reduce heat and simmer, stirring occasionally, until pasta is tender, 20 minutes.

3. Turn off heat and stir in parmesan and mozarella cheeses. Let stand for 5 minutes, stir and serve.
