Roasted Fennel

Ingredients
Half of a fennel bulb1 tsp olive oil1.5 T balsamic vinegarsalt & pepper to tastecooking spray
Directions
One serving (using half a fennel bulb)

Preheat oven to 400 F. Spray a baking pan with cooking spray.

Cut off leafy top and root stem of fennel bulb. Slice the bulb like you would an onion. Place on prepared baking sheet. Brush with olive oil and balsamic vinegar. Salt and pepper to taste (salt not included in nutritional count). Bake for 25 - 30 minutes. Enjoy as a great veggie side dish!

    I really HATE licorice, but I love fennel! Go figure! Anyway, this was an interesting recipe. I did a coarse chop on the fennel. LIned a pizza pan with release foil. I used regular balsamic vinegar, but just bought white Balsamic. I might try that next time as the color was a bit strange! - 2/15/11
