Easy Lemon Crinkle Cookies

Ingredients
1 (18.25 oz) package lemon cake mix2 eggs1/3 cup vegetable oil1 Tablespoon lemon juicezest from 1 lemon1/2 cup powdered sugar
Directions
Preheat oven to 375 degrees F (190 degrees C).

Pour cake mix into a large bowl. Stir in eggs, oil, and lemon extract until well blended. Refrigerate dough at least 15 minutes to make handling easier. Roll teaspoonfuls of dough into balls, then drop into a bowl of powdered sugar. Roll them around until they're heavily covered (the more powdered sugar, the more they'll have the "crinkle" look after being baked). Once sugared, put them on an ungreased cookie sheet.

Bake for 6 to 9 minutes in the preheated oven. The bottoms will be light brown, and the insides chewy.

    if you want to save even more calories, make this recipe using the weight watchers recipe, eliminating the eggs and oil. substitue a bottle of diet 7-up or some other lemon/lime diet soda instead. continue the recipe as directed once mixing the cake and soda. - 7/16/17
