Potato, Bacon and Egg Scramble

Ingredients
1 lb. small red potatoes (6-7), cubed6 large eggs1/3 cup nonfat milk1/4 tsp salt1/8 tsp pepper2 tbsp butter or margarine4 medium green onions, sliced (1/4 cup)5 slices bacon, crisply cooked and crumbled
Directions
Makes 5 servings.

1. In 2-quart saucepan, heat 1 inch water to boiling. Add potatoes. Cover and heat to boiling; reduce heat to medium-low. Cook covered 6-8 minutes or until potatoes are tender; drain.

2. In medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until well mixed; set aside.

3. In 10-in. skillet, melt butter over medium-high heat. Cook potatoes in butter 3-5 minutes, turning occasionally, until light brown. Stir in onions. Cook 1 minute, stirring constantly.

4. Pour egg mixture into skillet with potatoes and onions. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 3-4 minutes or until eggs are thickened throughout but still moist. Sprinkle with bacon.

    I used this recipe as inspiration, having had to use what I had on hand: leftover regular potatoes and regular onions. My version was so yummy, I am sure that the original was 5+ stars! - 2/17/14
