Yummy Lentils and Spinach

Ingredients
3/4 cup lentils5 cups water3 T. olive oil1 large garlic clove, minced or pressed1/4 t. red pepper flakes1 can chopped tomatoesjuice of 1/2 lemon1 handful or 2 of baby spinach1 1/2 t. salt
Directions
Wash lentils.
Place lentils and water in large saucepan.
Bring water to a full boil, then lower the heat and cook, covered, for 20 minutes.
Reduce heat to low.
Stir in the olive oil, garlic, tomatoes, salt and pepper flakes.
Cover the pot, and simmer for 10-15 minutes, stirring occasionally.
Add spinach, cook 1 or 2 minutes more until spinach has just wilted.
Add lemon juice. Remove from heat. Serve with rice.
