Pancake Battered Haddock

Ingredients
1 1/4 cup Aunt Jemima Buttermilk Pancake Mix1 cup Skim Milk1 large egg3 fillet Haddock (cut in half)1/4 cup Canola Oil
Directions
In a dish, combine mix, milk and egg with a wisk until fully incorporated. In a frying pan, add oil and heat until frying consistency. Dip pieces of fish in batter and fry for 3 minutes, turning half way through. Let drain on towels.

Makes 6 -1/2 piece servings.
