PB2 Peanut Chicken and Vegetables

Ingredients
1 pound chicken breast half without skin1/4 cup water1/4 cup PB23 tablespoons rice wine vinegar3 tablespoons soy sauce, divided1/2 teaspoon red pepper flakes1 tablespoon brown sugar1 cup pea pods1 1/2 cups carrots, shredded1 1/2 cups broccoli
Directions
Dice chicken breast into 1/2 " pieces. In small bowl, combine PB2 water, vinegar, brown sugar and 1 Tbs soy sauce. Stir until smooth. Set aside. In non stick pan, brown chicken, then add 2 Tbs soy sauce. Boil one minute until chicken is done. Add vegetables, stir fry until crisp-tender, add sauce. Serve over rice.
