2 large boneless skinless chicken breasts3 cans swanson's chicken broth2 cans greatland white beans1 can black beans1 can green chilis1/2 package of frozen mixed vegetables (1lb bag [corn, carrots, peas, green beans])1 can of yellow sweet corn3 slices ground or crumbled wheat bread (optional for thickening)1/3 package of white chicken chili seasoning (optional)oregano and garlic powder to taste
Makes approx 10 1-cup servings
boil chicken breasts in chicken broth, spoon off any fat, shred chicken with forks. Add all the ingredients bring to boil, then simmer for 30 minutes. I added 3 slices of ground wheat bread to thicken, but you don't have to, you could use pureed veggies, whatever you want as a thickener if you're short on time.
