Steak Tips with Peppered Mushroom Gravy

150 grams top sirloin, cut into 3/4 inch pieces1/2 tbsp butter, unsalted1 tbsp, finely chopped onion1 cup sliced mushrooms1/2 tsp crushed garlic\1/2 tbsp low-sodium soy sauce1 1/2 tbsp all-purpose flour3/4 cup low sodium beef broth1/4 tsp black pepper
Over medium heat in a skillet, spray a little non-stick spray. Add steak and saute until completely browned. Remove from pan; set aside.
Melt butter in pan; add onion and mushrooms. Saute for about 5 minutes. Add garlic and soy sauce. Sprinkle flour over mushroom mixture. Cook 1 minute, stirring constantly. Gradually add broth while stirring. Add pepper (and salt if desired). Bring to boil; cook until thickened. Add the meat and cook for about another minute.
Serve on top of egg noodles, rice or potatoes.
Makes 2 servings. Serving size: approx 3/4 cup

I tried this last night, with a couple of modifications: seasoned the beef with a blend of salt, pepper, and garlic powder before cooking, omitted soy sauce, used olive oil instead of butter, and added a chopped bell pepper to the carmelizing veg. It was delicious. I can't wait to make it again. - 1/6/11
