1-minute Homeade Honey Mustard Vinaigrette

1 tsp dijon or whole grain mustard (1 small squirt from the bottle)2 tbsp extra-virgin olive oil1 tsp fresh ground black pepper (about two grinds from the pepper grinder)1 tbsp cider vinegar (red wine, sherry and rice vinegar are good, too)1 tsp honey*optional - a pinch of dried tarragon
Combine all ingredients in a container and close and shake to combine (or in bowl and whisk). Pour over salad and toss to combine.
If taking to eat later, you can dress your salad ahead of time but should wait to add the salt until you're ready to eat; it will wilt the greens if left more than about 30 minutes.
