Unforgettable Baked Coconut Chicken

Ingredients
1 cup Shredded Coconut1/2 cup Panko Bread Crumbs6 Boneless Skinless Chicken Thighs (or breasts whatever you have! I used thighs because they were on sale!)1/4 cup Coconut MilkSea Salt1 egg
Directions
Preheat oven to 400 degrees.

Cut fat off of chicken and cut into 3 chunks.

Mix egg and coconut milk in bowl. Then, mix coconut, panko and salt

Spray cookie sheet with Pam.

Dredge chicken in milk/egg mix then in coconut/panko mix.

Arrange on sheet and bake for 25 minutes!!

    I've tried this tonight and it was extremely good. I did mine with boneless chicken thighs. I marinated the wet mixture with Ms Dash Lime Fiesta seasoning and juice from one lime. I mixed the pankos/coconuts with garlic powder, paprika and a tsp of salt... so so so so good. - 3/16/13

    Kitty, you can figure the quantities by looking at the nutritional breakdown and multiply by 6 servings:

    6 chicken thighs
    1 cup shredded coconut
    1/4 cup coconut milk
    1/2 panko
    1 egg

    Super easy! The first tme I made this it was kind of bland. Someone suggested used crushed croutons instead of bread crumbs for more flavor, (good idea.) I added a little curry powder to the dry mixture and it was WONDERFUL. It gave the dish a little more flavor without adding a ton of calories. - 1/20/10

    I make a gluten-free and much lower carb version of this by using crushed pork rinds instead of panko crumbs--the rinds make them seem like they are fried when they are not. - 1/15/18

    Easy and flexible. I subbed in ground pistachios in place of the bread crumbs.
