Pineapple ,Ginger Turkey Stir Fry

Ingredients
3/4 cup zucchini ,diced1/3 cup bell pepper,choped1/4 cup onion,chopped4 oz. turkey breast,cut in bite size pieces1tbsp dried parsly1 tsp garlic ,chopped1/2 tsp ginger finely grated1/2 tbsp soy sauce1tsp apricot preserves1 tsp peanut butter
Directions
spray skillit or wok with non stick spray.add vegtables and parsley .stir a min or two,add turkey and cook till done.Stir preserves,peanut butter,ginger,soy sauce and 1/4 cup water together.pour over all and cook down some to make a sauce.Add pineapple at end just till heated through.I serve over brown rice.
