Chocolate Tofu Pie

Ingredients
Silken Tofu, 1 packageSemisweet Chocolate ChipsHoneyVanilla ExtractVanilla WafersButterBaking cocoa
Directions
Start by forming the crust. Mash the vanilla wafers with a rolling pin in a plastic bag. Place in pie plate with melted butter and baking cocoa. Mix together and, with a spoon, form to pie plate shape. Place in refrigerator whilst preparing the rest.

Melt the chocolate chips, honey and vanilla, 2 minutes in the microwave. Stir. Place silken tofu in blender or food processor. Add chocolate mix to blender. Blend until mixed thoroughly. Quickly, pour into pie crust.

Refrigerate over night (or about 6 hours). Serves about 8.

    Not sure what the other commenter was talking about... This is a classic vegetarian recipe, and it works every time. My only complaint is that is is very high in calories, so I really have to budget to be able to eat this. - 6/2/08
