Shrimp Fried Rice with Broccoli

Ingredients
3 cups cooked brown rice16 large peeled shrimp, cut in half3/4 cup frozen peas and carrots4 green onions or scallions, small diced3 large eggs, beaten and scrambled3 tbsp olive oil3 tbsp lite soy sauce3/4 cup chopped broccoli
Directions
Beat eggs in a small bowl. Heat oil in wok or large skillet. Scramble eggs until almost done, then add broccoli. Cook for 3-4 minutes, then add rice, peas and carrots and diced onion. Cook until warmed, then add shrimp and cook until they have just turned white, then add soy sauce, stir and cook for 1 more minute.

Serve immediately.
