3 cups cooked quinoa (1 cup quinoa with 2 cups water, boiled 15 minutes)1 cup cherry tomatoes, chopped1/2 cup snap peas, chopped1/2 cup frozen green peas1/2 cup chick peas1/2 cup parsley, chopped1/2 cup green olives, chopped
mix and serve at room temperature or chilled. drizzle vinegar or lemon juice over to taste. serve over spring salad greens.
