Low Fat Vegatable & Bean Soup

Ingredients
2 32oz can of 98% fat free low soudium chicken broth1 cup chopped celery1 cup raw sliced carrots1 cup zucchini chopped2 cups red kidney beans1 tsp olive oil1 small head of green cabbage (chopped)1 small can of mushrooms1 packet of sodium free chicken bullion (herb ox)2 cups fresh spinach (cleaned & chopped)
Directions
In a large soup pot add olive oil, carrots, celery and cabbage and cook until softened. Add chicken broth and bring to a boil and let boil for about 20 minutes. Add rest of ingredients and simmer for another 20 to 25 minutes.
Serve and Enjoy!! 10 1 cup servings.
