Chicken Enchilada-Style for the Slow Cooker

Cream of Chicken Soup, 1 can (10.75 oz)Sour Cream, 2 cups (1 16-oz tub)Dry Onion Soup Mix - 1/2 pkgMild Green Chiles, diced, 4-oz canBoneless Skinless Chicken Breast, 2 pounds
Pour soup, sour cream, dry soup mix and chiles into slow cooker and combine until well blended.
Add chicken, covering with cream mixture.
Cook on LOW for 7-9 hours. Chicken should be shred-apart delicious!
Serve over rice, noodles or with tortillas. Serving size approximately 1/4 of a large chicken breast.

I made this with the meat I removed from a whole roasted chicken, so my meat was already cooked. Instead of cooking it all day, I threw it all together in a casserole and added pasta. I have two teen-aged boys who loved it (hence the pasta). You just have to watch your serving size if you do add - 2/13/13

I loved this dish. Instead of onion soup mix I sliced and browned a Vadalia onion in a little olive oil and added minced garlic as I was browning. I cooked on high for a while to get the chicken thawed and then turned down to low. Since I was a to work for 10 hours it slow cooked a long time. - 6/9/11

LOVE LOVE LOVE THIS! So easy and the chicken literally falls apart! I followed the advice of other reviewers and used a can of drained rotel. I served with brown rice, a little cheese, and put in whole wheat tortillas, but I actually like it better without the tortilla...just mixed with rice! - 1/8/11
