Mexican Pork Stew

Ingredients
1.5 lb. Pork - Cut into Cubes2 onion - chopped4 potato - cut into equal chunks3 large Carrots - cut into equal chunks1 garlic clove - diced2 cans stewed tomato1 can tomato sauce1 can tomato paste3 cups chicken broth1 tbsp Chili Powder1 tbsp Ground CuminJuice of 3 limes2 Tbsp Olive Oil
Directions
In large pot heat olive oil, toss in pork, onion, garlic and saute for 10 min until meat begins to be uniformly brown. Add remaining ingredients except the Lime Juice. Simmer for 45 minutes until carrots and potato are tender and meat is cooked through.

Add lime juice and serve. Makes approx 12 - 1.5-cup servings.

Goes well with rice and corn tortilla's.
