Spicy Thai Greenshell Mussels

1 kg Greenshell Muscells1 tbsp olive oil3 cloves garlic finely chopped3 tbsp onion finely chopped1 tbsp minced ginger2 tbsp fish sauce150 ml dry white wine1 finely sliced red chilli (seeds removed)3 tbsp sweet chilli sauce1 cup coarsely chopped fresh basil and mint1 cup sliced red and/or orange pepper2 pkg singapore or hokkien fresh noodles (soaked 5 min in hot water)
Serves 4 mains
Fry garlic, onion and ginger in oil until golden. Add fish sauce, wine and chilli. Add mussels, cover and simmer for 5-8 min. Add sweet chilli sauce and 3/4 cup of chopped herbs. Add pepper and noodles. Cover and simmer until heated through. Serve with remaining herbs.
