Oven-Baked Sea Bass

Ingredients
3 garlic cloves, crushed in a press1 T extra virgin olive oil2 t kosher salt2 t coarsley ground black pepper12 oz sea bass fillets (cleaned and scaled)1/3 C white wine vinegar (or white wine)1/2 C loosely packed presh parsley leaveslemon wedge to garnish
Directions
Preheat oven to 450. In a cup mix garlic, oil, salt, and pepper. Place fish in a shallow 1 quart glass or ceramic baking dish. Rub fish with oil mixture. Pour wine over fish. Bake fish, uncovered, 15 minutes; sprinkle with parsley and bake 3 minutes lonfer or until opaque thoughout and thickest part of fish flakes easlity when tested with a fork. Drizzle any pan juices over fish and serve with lemon wedges.

    This is a fabulous recipe. In fact, we ate this twice in one week. The first time, I used less than a teaspoon of salt. The second time, I did the recipe per the instructions 2 teaspoons of salt. I definitely liked the entree better with the reduced salt. - 8/17/08

    This was a fabulous recipe! I needed a quick recipe for Chilean Sea Bass and we all added this to the "make again" list. I think the salt should be cut down by 75%, it overwhelmed the natural buttery flavor of the fish. We will be using this recipe for years to come!
