Vegetable Barley Soup with Chicken

Ingredients
1/2 Chicken Breast small bite size pieces1/2 C. Pearl Barley2 Celery Stalks, diced2 Carrots, diced1/2 Large Onion, diced2 Tbls Parsley, dried of fresh1 tsp Rosemary, dried6 tsp Better that Boullion chicken broth concentrate8 C. WaterSpray of Olive Oil Spray
Directions
Rinse the barley and set aside
Spray the bottom of your pan with the olive oil spray
saute the celery, carrots and onion for about 5 minutes on low heat.
Add the water and the boullion, bring to a rolling boil
reduce heat to around the 3 setting, add the chicken and barley. Cover and let simmer for about 40 minutes. Add the rosemare and parsley at the end, salt and pepper to taste.

Remember that what you eat today will not taste the same as tomorrow, if you put too much salt in it now, it will be more salty tomorrow so go light and salt your bowl of soup instead of the whole pot.
