1 Cup Whole Wheat Flour2 Teaspoons Baking Powder2 Teaspoons Stevita (Stevia with Erythritol) OR 1/4 Splenda2 Tablespoons Unflavored Psyllium Powdered Fiber3 Scoops Dyamatize Elite Whey Protein Powder (Vanilla)1 3/4 Cups Kashi GoLean Original Cereal1 Cup Almond Breeze Unsweetened Vanilla (Almond Milk)1/8 Cup Molasses1/2 Cup Unsweetened Applesauce1/2 Cup Liquid Egg Substitute (Egg Beaters)1 Medium Ripe Banana (Mashed)
Preheat oven to 400 degrees F. Spray muffin tin with cooking spray or line with cupcake liners. Measure Kashi GoLean into a large mixing bowl. Add almond milk, applesauce, Egg Beaters, Molasses, and mashed banana. Mix well and let stand for 10 minutes to soften the cereal. Measure dry ingredients into a medium mixing bowl: Whole wheat flour, baking powder, Stevia (or Splenda), psyllium fiber powder, salt, and Dymatize Elite Whey Protein Isolate. Mix dry ingredients with wire whisk to blend. Gradually add the dry ingredients to the large bowl with the Kashi mixture. Mix until all dry ingredients are well moistened. Fill prepared muffin cups with batter. Bake for 20 minutes at 400 degrees F. Makes 12 muffins. Each muffin is one serving.
