Sandys pico de gallo

Ingredients
4 Firm Roma Tomatoes, diced1 med sweet onion, diced approx. 4.5 oz1 Jalapeno pepper or to taste 4 T cilantro diced or to taste Juice of 2 Limes1 tsp chopped garlic
Directions
Dice tomatoes and sweet onion, I use one of those food dicers. I don't do it by hand
Remove some or all or none of the seeds in the Jalapeno pepper depending on how hot you want it. Then dice it.
Remove leaves of Cilantro from stems and dice. Add 1 tsp chopped garlic or to taste. Mix gently and squeeze Lime Juice over top. Mix gently and refrigerate for at least 2 hrs for flavors to blend. I like it on my salads for a low calorie alternate to salad dressing.

    If you remove the seeds from the jalapeno( do not touch with bare hands) they add a lof of flavor without the heat.
