Egg, fresh, 3 largeGranulated Sugar, 2 cupMotts Natural Apple Sauce, 0.5 cupCanola Oil, 0.5 cup Salt, 1 tsp Cinnamon, ground, 3 tsp Vanilla Extract, 1 tsp Baking Powder, 0.25 tspBaking Soda, 1 tsp Zucchini, 3 cup, gratedFlour, white, 3 cupSimply mix all the ingredients together and bake in a preheated 325 degree oven.I make these into mini-muffins with a mini muffin pan, but you can use a regular muffin tin or even bake it into a zucchini bread loaf. You may have to adjust the time accordingly.For 48 mini muffins bake for 15 - 20 minutes!My picky-eater children adore these muffins and I have yet to meet a child or adult who doesn't like them!
