Fresh Salsa

Ingredients
1/2 cup chopped tomatoes1/4 of a small onion chopped1/2 small sweet bell pepper chopped 1 Jalapeno Pepper (remove seeds if you dont want it too hot)2 tbsp fresh cilantro choppedThe juice of 1/2 a lemonsalt to taste
Directions
chop everything up very fine stir together in bowl and let sit for about 2 hours before enjoying. This keeps for up to 1 week in the fridge, does not freeze well!

    I dont think canning would work well for this one as the cooking would change the texture. canning tomatoes lets out a lot of water, it would be very watery after canning.

    There are some great cooked salsa recipes that would work better for canning.
