Vegetarian Pizza

Ingredients
~1 serving Brown sugar butternut squash (1 serving is 1/2 cup prepared)~1 large whole wheat tortilla~1/2 cup sliced zucchini (sauteed in pan)~1/4 cup diced onions (sauteed in pan)~1/4 cup diced sweet red peppers (sauteed in pan)~1 oz goat cheese (semisoft)
Directions
~Sautee onions and red peppers together, set aside
~Sautee/grill zucchini, set aside

~Preheat oven to 400 degrees F

~spread the butternut squash mixture over the whole wheat tortilla, just like you would spread pizza suace
~arrange the sauteed onions & peppers
~arrange the sauteed/grilled zucchini
~crumble the goat cheese over pizza

~Bake in over for 8-10 minutes at 400 degrees F

Serve with a salad of your choice and Enjoy!

    OMG This was awesome, I would never have thought to use squash instead of pizza sauce, you can switch up the toppings a bit too if you don't want it be vegetarian or if you prefer other veggies.....I have eaten this 3 times in a row now! - 1/28/10
