Bran Muffins

Ingredients
1-1/4 cup bran cereal1 cup buttermilk1 egg1/2 cup unsweetened applesauce2 tbsp molasses2 tsp vanilla extract1 cup whole wheat flour1 tsp baking powder1 tsp baking soda1 dash salt
Directions
Preheat over to 425F.
Line 12 cup muffin tin with papers.
Cover cereal with buttermillk and set aside.
In a large bowl, mix egg, molasses and vanilla.
In another bowl, combine dry ingredients, then add to egg mixture and stir until just blended.
Add cereal - buttermilk mixture and blend well.
Spoon batter into 12 muffin tins, place in pre-heated oven for 15-20 minutes.

    these are great! I sometimes add a tbs of cocoa and some cinnamon for a different taste. I bake them in mini muffin pans. Almost forgot! You can used wheat bran instead of cereal. - 6/11/11
